Raclette is a Swiss dish and Swiss tradition. Half-wheels of racette cheese are set under a special salamander and the melted top surface of the wheel is scraped off onto a warmed plate with boiled potatoes, gherkins (sour, not sweet) and the like. Host Jean-Paul (pictured) preparing this traditional dish for two Australian friends. The bottle of wine made the task a lot easier as it is hot and thirsty work.
